Swans ACT Supporter Members would usually stop for a meal break on their bus trip up to the SCG, so Swans Ambassador Annette Ellis came up with a solution for watching at home.

Lipsmacking Spicy Drummettes
1/4 cup lemon juice
2 tablespoons olive oil
2 tablespoons honey
2 tablespoons tomato paste
1 tablespoons balsamic vinegar
2 cloves crushed garlic
2 teaspoons finely grated lemon rind
½ teaspoon chilli powder (or your taste)
24 (1.7kg) chicken drummettes
1 green shallot
- Combine all ingredients except the chicken and onion, in a large shallow dish. Add the chicken; stir until well coated in the marinade. Cover and refrigerate for 3 hours or overnight, stirring occasionally.
- Preheat oven to 200 degrees (180 fan-forced).
- Place drained chicken in a shallow baking dish. Roast, uncovered, for 35 minutes or until cooked through, brushing with remaining marinade after 10 minutes.
- Serve chicken topped with finely chopped shallots.
Easy Peasy Gourmet Sausage rolls
1 ½ sheets puff pastry, thawed
6 thick lamb sausages (450 g)
3 teaspoons tomato relish (plus extra to serve?)
1 egg lightly beaten
1 tablespoon sesame seeds (optional)
- Preheat oven to 200 degrees (180 fan forced). Line a large baking tray with non stick baking paper. Cut large sheet of pastry in half (you will now have 3 rectangles of pastry equal size). Spread 1 teaspoon tomato relish along one long side of each pastry rectangle, leaving a 2cm border along the long side.
- Squeeze 2 sausages from their casing onto a pastry rectangle, so they cover the relish. Repeat with remaining pastry rectangles, relish and sausages. Brush opposite long edge with egg and roll up to enclose filling (don’ t roll up too tightly – filling could spill out). Place seam side down and cut each roll into six lengths.
- Place sausage rolls, seam side down, onto prepared trays. Brush with egg and sprinkle with sesame seeds. Bake 20 minutes or until golden brown. Serve with extra tomato relish, as you cheer our boys onto victory!!
